They still know how to do some good old fashioned Star Wars hacked together and greebled design - it's all over Galaxy's Edge, and the kid's Star Wars room on the Wish. So this plastic look is an intentional choice, for whatever reason.

The Starcruiser never properly managed to look like Star Wars. Disney Star Wars has actively moved away from the grunge and towards a sort of... flat white plastic style that's on display at the Starcruiser and also the Star Wars bar on the Wish.
